Today is a rainy day in the city. It’s shaping up to be a perfect night to snuggle on the couch and watch the Election Day coverage. With the avocados and sweet potatoes I have in my kitchen, I plan to make a version of this recipe at home. It should yield enough leftovers for lunch the next few days too!
